Parmesan Jalapeno Quiche

Ingredients

  • 1 9-inch unbaked piecrust 14 oz. Can artichoke quarters
  • 8 oz. Shredded Parmesan or Romano cheese
  • 1/4 c. feta cheese
  • 2 T. minced jalapeno peppers (more depending on desired hotness)
  • 1/2 c. half and half
  • 1/2 c. lite sour cream
  • 4 large eggs
  • 1/4 tsp. salt
  • pepper to taste

Directions

  1. Preheat oven to 350 degrees.
  2. Chop artichokes into bite-size pieces. Fill crust with artichokes and cheeses.
  3. Whisk sour cream and half and half; add eggs and whisk until fully mixed.
  4. Add jalapenos, salt, and pepper.
  5. Pour egg mixture over filled crust.
  6. Bake at 350 degrees until golden and knife inserted into pie comes clean, about 45-50 minutes.
